B6 is responsible for maintaining a healthy metabolism, protecting you from disease and sustaining energy levels. Additionally, B6 provides support for red blood cells since it’s required for the synthesis of hemoglobin according to the United States Potato Board (USPB).
“When it comes to metabolism, B6 helps your body make nonessential amino acids, which are the ‘building blocks of protein,’” says Duane Maatz, Executive Director of the Wisconsin Potato and Vegetable Growers Association (WPVGA) citing livestrong.com. “This nutrient also works with the liver to absorb fat lipids.”
Eating foods rich in vitamin B6 further contribute to disease prevention such as anemia, Crohn’s disease, arthritis and heart disease says livestrong.com.
Furthermore, other sources indicate B6 has proven beneficial for strengthening immune systems and balancing hormones.
“It’s incredibly important to eat fresh fruits and vegetables on a daily basis and strive to meet the daily recommended values of all the vitamins and nutrients each one provides,” Maatz says. “Potatoes are naturally packed with vitamins and nutrients, not to mention that they’re free of gluten, fat, cholesterol and sodium. Furthermore, the fact that they are so versatile and that there are so many varieties to choose from make them a fantastic choice for your family.”
So the next time you buy potatoes, remember their significant contribution of vitamin B6 and its importance to your health. You just may find yourself preparing them for every meal!
