- 1 small head red leaf lettuce or salad greens of your choice
- 1 Tbsp. parsley
- 2 green onions, sliced
- 1 can mandarin oranges, drained
- 1/2 c. caramelized almonds
Mix the above ingredients together. Serves six.
Dressing Ingredients
- 1/4 c. oil
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 2 Tbsp. sugar
- 2 Tbsp. vinegar
- 2-3 dashes Tabasco
Caramelized Almonds
- Put 2 Tbsp. sugar in a heavy skillet and add 1/2 c. slivered almonds.
- Stir constantly over low heat until sugar melts, turns brown and collects on the almonds.
- Remove from heat and break apart to cool. (Put cooking spray in the pan before adding sugar.)
