Cookies
- 1 c. butter, softened
- 1 c. confectioners sugar
- 1 egg
- 1 tsp. orange rind, grated
- 1/2 tsp. salt
- 2-1/3 cup all-purpose flour
Orange Frosting
- 1 tsp. orange rind, grated
- 3 Tbsp. orange juice
- 1/4 c. butter, softened
- 2 2/3 c. confectioners sugar, sifted
Directions
- In a large mixing bowl, cream butter with confectioners sugar. Beat in egg.
- Blend in the orange ride, salt and flour.
- Chill until dough is stiff enough to handle.
- Roll out dough 1/4 inch thick. Cut out shapes with cookie cutters and place on an ungreased baking sheet.
- Bake at 375 degrees for 12 to 15 minutes until lightly browned at edges.
- Remove to a cooling rack. When cool, frost with orange frosting.
Orange Frosting
In a small bowl, cream butter until soft and fluffy. Beat in confectioners sugar, orange rind and orange juice.
