- thick cut pork chops (1.5 in. thick)
- boxed stuffing
- 1 1/2 c. apple juice
- salt
- pepper
Directions
- Cut a large slit/pocket into the side of each thawed chop.
- Mix box stuffing with apple juice. You can use water, I just prefer the pairing of apple juice to enhance the pork flavor. Let set until juice is all absorbed.
- Pack stuffing into each pocket of pork chop so it’s full.
- Season chops with salt and pepper.
- Bake in the oven at 350 degrees until an internal temperature of 165 degrees is reached.
October is Pork Month. Enjoy this recipe courtesy of Jeffrey and Jenna Okonek who raise purebred Hereford and crossbred beef along with Hampshire/Yorkshire cross pigs from farrow to finish on their farm in Vesper, along with their four children. They show and sell their livestock locally. Originally appeared in the October | November 2022 Rural Route.
